The Culinary Manager will engage with all levels, inspire teams, and promote results by fostering a collaborative partnership between our culinary department and pub operations. The position will focus on the following primary areas of responsibility : Process Definition, Coaching & Training, Data Support, and Creative Development.
Responsibilities :
Own the standards and best practice definitions for the kitchen by optimizing kitchen design, equipment, smallwares and packagesEstablish clear best practices and guides for inventory receipt, product lifecycle, prep, build and plating processFocus on the following goals for all process definitions : Efficiency, Safety, Sanitation, Gross Margin, and Food Quality & PresentationMaintain an accurate definition of all theoretical COGS by menu itemsCollaborate with Director of Training to roll out training materials and guidelinesConduct store support visits to provide coaching and re-setting when necessaryAssess and build our team culture to inspire and develop leadersSupport the ecosystem with data management and cleanup for all food inventory items and builds in Meez and Restaurant 365Drive continuous improvement with our food quality and presentation under V.P. of Retail and the Culinary Development teamRefine existing recipes / builds to ensure alignment with our vision and program goalsDevelop new recipes for the pizza pubs via seasonal offerings, ongoing menu refreshes, and special eventsQualifications
Minimum of 4 years of documented success as a chef in a high volume, scratch kitchenExtensive baking knowledge with a focus on pizza dough and breadMastery and comfort with pub economics : COGS, theoretical COGS, labor, and Income StatementsExperience developing recipes from ground up, including creative definition, sourcing, yield assessment, prep and build sheet definitionsDemonstrate ingredient knowledge and understanding of culinary trendsDemonstrate effective communication skills, up and down the organization structureWorks well with limited oversight, remaining focused on goals and deliverablesHistory of developing others into leaders and brand ambassadors, including training experience3+ years of restaurant management experienceServe Safe Certified Food ManagerSoftware : Google Suite, Meez, Restaurant 365, and ToastTABC Certification
