Develops menus, menu modifications, and standardized recipes for the school meal program in accordance with federal, state, and local standards, guidelines, and regulations. Manages the full nutritional environment, to include internal wellness programs and coordination with external organizations for wellness initiatives. Facilitates the implementation of special dietary plans for students with diet-related allergies / disabilities. Creates and maintains documentation for foods, nutrient analysis, nutrition grant writing, and grant implementation. Performs other duties as required.

Responsibilities

  • Reviews, analyzes, and maintains product, nutrient, and recipe information on ingredients and assures that all food and beverages meet or exceed federal and state nutrition standards. Performs nutritional analysis of menus.
  • Updates all information and creates online menu information in the Food and Nutrition Services (FNS) database.
  • Creates, plans, and implements breakfast, lunch, snack, and supper menus that comply with the United States Department of Agriculture (USDA), National School Lunch Program (NSLP), and School Breakfast Program (SBP) program standards for meal patterns, nutrient levels and calorie requirements for the ages / grade levels served.
  • Coordinates testing and evaluation of current menu items and new food products with procurement supervisor. Arranges student testing with cafeteria managers and cafeteria leads prior to items being placed in the menu rotation.
  • Prepares all written communication for distribution to all cafeterias to facilitate food preparation and utilization.
  • Visits schools to evaluate food quality, use of recipes, preparation, and customer satisfaction.
  • Coordinates with cafeteria managers, cafeteria leads, and nurses to accommodate student dietary concerns documented by a health care provider. Develops alternative menus based on allergies, medical conditions that require food / menu modifications, or special diet plans for students.
  • Creates and maintains files of student diet orders and requests. Interprets public policy law and USDA regulations regarding menu modifications for students with disabilities, allergies, and food intolerances.
  • Provides training, prepares the menu, creates informational flyers, tracks usage, and monitors the budget for the Fresh Fruit and Vegetable Program grant.
  • Manages the full nutrition environment to include developing, implementing and managing nutrition and wellness for students. Utilizes the school cafeteria as a learning environment to reinforce nutrition education and healthy lifestyle choices to ensure support of healthy eating and encourage participation in the school meal programs.
  • Procure and distribute nutrition materials and serve as a resource for wellness policies within the school district. Communicates regulations that competitive foods and beverages marketed and sold to students on the school campus during the school day must meet the Maryland Nutrition Standards.
  • Serves on the School Wellness Council and is the liaison to the school wellness champions. Communicates with internal BCPS partners to participate in school wellness events.
  • Serves on the local school health council in partnership with Baltimore County Health Council.

Completes the USDA’s Triennial Assessment to evaluate the progress of wellness goals, compare the strength and comprehensiveness of the policy to a model policy, and assess each schools’ compliance with implementing the wellness policy.

Ensures that the public is informed about the content and implementation of the wellness policy, makes the policy and any updates to the policy available to the public on an annual basis. Communicates the triennial assessment to inform the public regarding compliance with the wellness policy.

  • Works with external partners to obtain grants and nutrition-related programs for FNS.
  • May supervise, direct, and evaluate dietetic interns as requested to support health-related programs, post-degree programs, etc.
  • Qualifications

    Education, Training and Experience :

  • Graduation from an accredited college or university with a bachelor’s degree in dietetics, food service management, or related field.
  • Three (3) years’ experience in the field of food service.
  • Supervisory experience is preferred.
  • Licenses and Certificates :

  • Possession of a current Registered Dietitian certification issued by the Commission on Dietetic Registration (CDR) of the Academy of Nutrition and Dietetics (AND) is required.
  • Possession of a current license as a Dietitian-Nutritionist issued by the Maryland Board of Dietetic Practice is required.
  • Possession of a current Baltimore County Certified Food Service Manager – Level I certification is required at the time of hire or within 90 days of hire into this classification.
  • Possession of a valid Class C Maryland driver’s license, or an equivalent, is required.
  • Required certifications must be maintained throughout employment in this position.
  • Knowledge, Skills, and Abilities :

  • Knowledge of food services quality control policies and procedures.
  • Knowledge of child nutrition programs.
  • Knowledge of commercial food service equipment.
  • Skill and ability to maintain accurate records (e.g., data for federal and state reimbursement claims for the school meals program).
  • Ability to communicate effectively orally and in writing.
  • Ability to organize, plan, and execute work with minimal supervision.
  • Ability to operate a personal computer and related software and troubleshoot minor problems.
  • Ability to maintain confidential information.
  • PHYSICAL AND ENVIRONMENTAL CONDITIONS :

    Work is performed in the field at school cafeterias and in the central office. Work involves sitting, standing, walking, bending, and lifting.

    CONDITIONS OF EMPLOYMENT :

    Work involves driving to school cafeteria sites and involves using food service equipment in the development of standardized recipes. Work involves being on-call for emergencies, deadline pressure, and frequent interruptions.

    At least 12 hours of annual continuing education / training must be completed in accordance with the U.S. Department of Agriculture Professional Standards for School Nutrition Employees.

    Salary : Grade 04 on the OPE 12 month pay scale $71,145 - $112,191.

    Retirement : This position is eligible for the Baltimore County Employees’ Retirement System.
