Motor City Seafood Company is seeking a highly skilled and detail-oriented Fish Processing Technician to join our dynamic team in Highland Park . As a growing statewide company, we pride ourselves on delivering the highest quality products to our customers while maintaining the utmost commitment to sustainability and food safety.

As a Fish Processing Technician, you will be responsible for processing and preparing various types of raw fish for distribution and sale. Your primary focus will be on ensuring the highest quality of fish products while adhering to strict health and safety standards.

Essential Duties and Responsibilities

  • Receive and inspect incoming fish shipments, checking for freshness, quality, and adherence to regulatory requirements.
  • Clean, scale, and fillet fish using appropriate tools and techniques.
  • Remove bones and skin from fish fillets as required.
  • Ensure any quality issues are immediately reported to a manger.
  • Operate and maintain processing equipment such as fish skinning machines, filleting machines, and deboning machines.
  • Weigh, grade, package, and label processed fish products according to specifications.
  • Ensure proper storage and preservation of fish products, including refrigeration and freezing.
  • Maintain a clean and organized work area, following sanitation and hygiene guidelines.
  • Monitor and record processing time, temperatures, and other relevant data.
  • Collaborate with team members to meet production targets and quality standards.
  • Pack wholesale orders as required.
  • Report any equipment malfunctions or safety hazards to the supervisor.

Work Schedule

The Fish Processing Technician is a full-time position with a flexible schedule. Weekend hours are required as schedule demands.

    The Fish Processing Technician will work on site at our new state of the art production facility in Highland Park, Michigan. Physical demands include but not limited to :

  • Ability to work in a cold controlled environment of
  • Ability to use tools and equipment, including knives.
  • Ability to work in wet / dry conditions.
  • Exposure to FDA cleaning chemicals.
  • Ability to operate warehouse equipment.
  • Hand use ability includes single grasping, fine manipulation, pushing and pulling.
  • Must frequently stand, walk, bend, kneel, and crouch throughout the day while lifting, stacking, moving, and rotating items that weigh up to 50 pounds; push / pull cart with up to 100 pounds of force.
  • Required Qualifications

  • Eighteen years of age or older, with valid ID proving legal work status.
  • One year experience and / or training in seafood preparation and knowledge.
  • Certification in food safety or seafood handling.
  • Required Skills & Abilities

  • Demonstrated ability in knife handling and use of other cutting equipment.
  • Strong knowledge of fish species and fish processing techniques, including scaling, filleting, deboning, and packaging.
  • Familiarity with food safety regulations and procedures.
  • Work a flexible schedule, including weekends.
  • Proper clothing required, as production area maintains a cold temperature.
  • Ability to work in a fast-paced environment and meet production targets.
  • Attention to detail and commitment to quality.
  • Strong physical stamina and ability to lift heavy loads.
  • Ability to work independently as well as a part of a team.
  • Punctuality / attendance.
  • Professionalism and high-level communication.
  • Additional Requirements

  • Adhere to the policies and procedures outlined in the employee policy manual and any applicable contracts, signed agreements, and work rules.
  • Cooperates with all management and staff at MCSC.
  • Follows all OSHA rules and regulations, as they apply to the position.
