Executive Chef
The Executive Chef will lead the culinary operations for a high-volume, scratch Italian restaurant at Caesars Palace. This role requires a strong understanding of coastal Italian cuisine and the ability to deliver exceptional quality while managing large-scale operations. The Executive Chef will collaborate closely with the Culinary Director and, when applicable, a celebrity chef partner to ensure the outlet meets brand standards and exceeds guest expectations.
How You Will Create The Extraordinary
Exhibit professionalism through integrity, accountability, and excellence in all aspects of leadership.
Oversee all BOH operations, including staff scheduling, station assignments, ordering, receiving, prep lists, and quality control throughout production and service.
Design and implement authentic coastal Italian menus that reflect seasonal ingredients and scratch preparation.
Collaborate with celebrity chef partners when applicable to maintain brand vision and culinary standards.
Provide training and development for both BOH and FOH teams on menu knowledge and cooking techniques.
Maintain rigorous standards for food quality, presentation, and consistency.
Ensure compliance with SNHD regulations and company health and safety policies, including HACCP protocols.
Monitor and manage food cost, labor cost, and other controllable expenses within budget guidelines.
Conduct regular internal health and safety inspections and address equipment issues promptly.
Foster a positive and supportive work environment while holding team members accountable.
Partner with FOH leadership to ensure an exceptional guest experience.
Minimize waste and spoilage through accurate forecasting and inventory control.
Lead daily pre-shift meetings and communicate operational priorities effectively.
Maintain high standards of cleanliness, sanitation, and personal hygiene.
Demonstrate flexibility by taking on additional responsibilities as needed within the scope of the position.
What You Will Need
Minimum 35 years of Executive Chef experience in a high-volume, scratch Italian restaurant.
Proven ability to manage large-scale culinary operations in a fast-paced environment.
Preferred :
Experience working with a celebrity chef partner or within a branded chef-driven concept.
Strong understanding of coastal Italian cuisine, including regional specialties and ingredient sourcing.
Culinary degree or formal apprenticeship.
Bachelor's degree in hospitality or related field.
Experience within luxury hotels or reputable free-standing restaurants.
Additional Requirements
ServSafe Certification and Food Handler's Card required.
Comprehensive knowledge of kitchen equipment operations and maintenance.
Ability to read, write, and communicate effectively in English.
Strong financial acumen with ability to manage budgets and control costs.
Excellent leadership, communication, and organizational skills.
Ability to work any shift, including nights, weekends, and holidays, with flexibility for long hours when necessary.
