ESSENTIAL PURPOSE : To supervise the preparation of luxury resort quality pastries and baked goods to be served in all hotel food outlets.

COMPENSATION : $21-24 an hour

ESSENTIAL DUTIES :

• To understand and respond to all guest needs and requests in a timely and professional manner.
• To assist, as directed, to train, and support Pastry staff, to ensure efficient and professional preparation of pastries and baked goods.
• To portion, plate, and tray all desserts for hotel food outlets.
• To deliver foods in a timely manner.
• To review banquet function sheets and leisure counts daily, in order to establish work detailed lists for Pastry staff.
• To maintain a reference file of current recipes, and continually develop new pastry items and fulfill Splashes restaurant weekly desserts.
• To requisition pastry supplies, as needed and approved.
• To fill pastry orders, as requested.
• To monitor daily forecast and ensure advance prep needs are met on a daily basis.
• To maintain inventory ordering for Banquet and restaurant.
• To immediately report all suspicious occurrences and hazardous conditions.
• To maintain the cleanliness and safety of work areas at all times, including Splashes, Kitchen, Pastry areas, Banquet Walk-in and Freezer.
• To practice safe work habits at all times, to avoid injury to self and others.
• To ensure safe work practices of all Pastry staff, including compliance with company departmental safety rules and regulations and the proper use and handling of all relevant equipment.
• To attend all mandatory meetings as directed.
• To perform other tasks, including cross-training, as directed.

JOB KNOWLEDGE & EDUCATIONAL LEVEL :

High school diploma or equivalent preferred. English fluency required. Spanish language ability helpful. Must have minimum 6 months experience in pastry preparation and decorating, including two years in a supervisory position. Show pieces optional. Hotel experience preferred.

WORKING CONDITIONS : Works indoors throughout shift in clean, well-lighted area.

Frequently works behind hot ovens. Work space is small and frequently congested. Business levels may require fast work pace. Makes frequent short trips to the refrigerator, freezer, and storeroom. Kitchen may be moist, warm, and odorous from cooking foods. Kitchen floor may be slippery from moisture and grease. Bi-level structure.

PHYSICAL DEMANDS :

Stands and walks short distances throughout shift. Frequently required

to handle and move objects weighing up to 50 lbs. over short distances. Bends, stoops, reaches, pushes, pulls, and lifts to perform routine job tasks. Must be able to work well under pressure.
