Job Description

Wynn Resorts is seeking a driven and detail-oriented  Assistant Director of Food & Beverage Development  to support the Senior Vice President of Food & Beverage Development in the planning, coordination, and execution of both new F&B projects and the ongoing evolution of existing concepts. This role is instrumental in maintaining the world-class standards of Wynn Resorts while driving innovation and operational excellence across our global portfolio. The ideal candidate thrives in a fast-paced environment, demonstrates strong initiative, and has a proven ability to manage multiple projects with precision and professionalism.

Key Responsibilities :

  • Assist in the strategic planning and development of new F&B concepts across Wynn and Encore Las Vegas and Wynn Al Marjan Island by maintaining project timelines, budgets, and deliverables, ensuring alignment with each department’s overall vision and objectives.
  • Support the F&B operations team to continuously enhance existing F&B venues, ensuring competitive positioning and guest satisfaction.
  • Coordinate with internal teams (including Design, Branding, Operations, Culinary, and Procurement) and external consultants to ensure seamless project execution.
  • Prepare presentations, reports, and briefing materials for executive review.
  • Monitor and report on the progress of multiple projects, identifying potential risks and proposing solutions.
  • Cultivate strong relationships with cross-functional stakeholders, operators, and vendors.

Qualifications

  • Minimum of  three years of progressive experience in hospitality, F&B operations or development or retail buying ; luxury experience preferred.
  • Demonstrated ability to manage multiple large-scale projects with strong organizational skills.
  • Highly motivated, self-starter with excellent problem-solving and critical thinking abilities.
  • Strong verbal and written communication skills; able to effectively present ideas and influence outcomes.
  • Proficiency in Microsoft Office Suite; familiarity with design software or image based ai is a plus.
  • Ability to travel occasionally as needed, including internationally.
  • Must be able to obtain and maintain any licensing or active work cards required, at present or in the future, for this position at all times.
